In the heart of the Friulian plain, in the tiny village of Gradiscutta di Varmo, there's a place you need to know about to find. Since 1928, the Morassutti family has been cooking the way Friulian tradition demands: local ingredients, homemade pasta and the fogolar kept burning all year round.
Founded in 1928 by Toni and Palmira Morassutti, the trattoria is surrounded by the countryside of Gradiscutta, a tiny hamlet in the municipality of Varmo, in the province of Udine. It's not the kind of place you stumble upon—you have to know it's there, leave the motorway behind and cross the Friulian plain until you reach a village that barely seems to exist on the map.
The approach through the centuries-old park, dotted with sculptures by Giorgio Celiberti, is an experience in itself. In the warmer months, the portico overlooking the gardens is a wonderful place to dine outdoors in an exceptionally peaceful setting. Inside, the atmosphere is warm and welcoming, with terracotta floors, exposed wooden beams and the traditional fogolar always lit, its open fire still used for grilling.
What truly sets this place apart is the way it has preserved the essence of Friulian hospitality—genuine, understated and deeply rooted in tradition. The cuisine is seasonal, thoughtful and quietly refined, built around local ingredients and homemade pasta. Just beside the dining room, the cellar showcases an outstanding selection of Friuli's finest wines.
