The story begins in 1947, when Joško Sirk’s parents arrived from the former Yugoslavia in the Collio to run a small osteria. Today, La Subida is a country resort with a Michelin star, woodland cottages, and its own vinegar cellar. But its soul remains that of a place shaped by the border.
In 1981, Joško Sirk and his wife Loredana decided to create a small rural hamlet on the wooded hillside surrounding the family osteria, inspired by the villages they had discovered across the border on their motorcycle trips. Today, La Subida is a complete ecosystem: Trattoria al Cacciatore—awarded a Michelin star since 2007—the more informal Osteria La Preda, woodland cottages, a riding stable, and a vinegar cellar dedicated to Ribolla Gialla.
One of the chef’s secrets is spending time with the grandmothers who preserve the culinary heritage of the Gorizia Collio—a precious body of knowledge at risk of disappearing, which La Subida is committed to preserving and sharing with the world.
La Subida is just a few minutes from Castello di Spessa and the vineyards of the Collio. It is the perfect place for those who want to stay an extra day and truly understand this land.
